Double Down on Blueberries: Blueberry Kush Muffin Recipe

These gluten- free muffins are bursting with the flavors of late summer blueberries while teasing your tongue with hints of lemon zest.

The scent of fresh baked blueberry muffins wafting throughout the kitchen air during the approach of fall is a simple pleasure in life. Eating one of these delicious creations is something that should be of mandatory indulgence.

The addition of the strain Blueberry Kush enhances the blueberry flavor while adding undertones of an earthy herbal essence. This 80% indica and 20% sativa, will put your body into a deep state of comfortably washing away all serious aches and pains. Enjoy for breakfast on the go, during brunch with tea, after dinner, or whenever you damn please.

Mise en place:

4 eggs
1 1/2 cup gluten free flour (make sure it is made out of white rice flour)
1 cup yellow cornmeal
1 cup sugar
1 cup vanilla rice milk
1 cup whole blueberries
1/2 cup Blueberry Kush vegetable oil
2 tablespoons lemon zest
3 teaspoons baking powder
2 teaspoons xantham gum
1 teaspoon vanilla extract
1/4 teaspoon salt

Directions:

Step 1: Preheat your oven to 350 degrees.

Step 2: In a large bowl, add all of the dry ingredients.

Step 3: In another bowl add the eggs, Blueberry Kush vegetable oil, vanilla rice milk, vanilla extract and lemon zest. Carefully stir with a whisk until well combined.

Step 4: In a stand mixer, carefully mix the dry into the wet ingredients until the batter comes together. Be sure to stop the mixer to scrape the sides and bottom during this process. You must mix the batter until it does not have any more “hotspots” or areas where the infused vegetable oil is pooling.

Step 5: Line a muffin pan with papers then fill each liner half way full with muffin batter.

Step 6: Using a spoon or your fingers, gently heap a small pile of blueberries in the middle of the batter. Using the remaining batter, cover up each blueberry until the batter is very close to the top of the liner.

Step 7: Bake for 15-18 minutes, or until a toothpick comes out clean. Serve and enjoy!

Dosage:

If one gram of cannabis tests at 20% THC, 20% of 1,000mg would be 200mg. Sub the number of your THC percentage and do the math to figure out your dosing for the vegetable oil. Remember, this recipe yields 12 muffins, so be sure to dose accordingly. If you want a smaller dose, cut the cannabis down to a smaller portion. If you want a larger dose, add the amount you desire.

Strain Suggestions:

I would recommend strains that possess sweet blueberry like terpenes. The following would be ideal if you didn’t have Blueberry Kush: Blueberry Haze, DJ Shorts Blueberry, or Blueberry Lambsbread. If you cannot find these strains don’t panic, just follow your nose and taste buds to finds strains that would complement the dish.
