420 Edible Recipe: Cannabis-Infused Granola Bars for On-the-Go Consumption

These cannabis-infused peanut butter and honey granola bars are a healthy and easily transportable option for your 420 edible celebration.

The 420 holiday is a special day of the year, a day when cannabis consumers the world across come together and celebrate their love for the plant. While many people will choose to smoke flower or dab concentrates, plenty will choose to up their cannabis intake throughout the day by eating an edible or two.

This granola bar is the perfect 420 edible because it’s easy to take on the road to any number of parties or picnics, and easy to control your dosing. Make sure to always start low and slow, as it is definitely possible to overeat a potent edible and get too high — especially on an exuberant day like 420. You know your desired potency, so infuse wisely. #Don’tFearTheEdible

These are “top of the stove” granola bars, which means they’re made in a pan, rather than baked in the oven. The peanut butter and infused honey combination makes for a soft bar, and the old fashioned oats give it a rustic chew. 

Cannabis-Infused Granola Bars

Makes 12 servings with about 10 mgs of THC in each bar

Ingredients

3/4 cup peanut butter

1/6 cup cannabis-infused honey (can be adjusted to fit dosage information below)

1/4 cup regular honey

2 tablespoons coconut oil

2 teaspoons vanilla extract

1/2 teaspoon almond extract

Pinch of salt

2 1/3 cups old-fashioned oats

1/2 cup chopped almonds

1/2 cup shredded unsweetened coconut

1/4 cup mini chocolate chips (optional)

Directions

Step 1: Make your cannabis-infused honey, if you haven’t purchased it from a dispensary. We recommend making a big batch, as it’s difficult to make a small amount. For 4 cups of cannabis-infused honey, place a ½ ounce (14 grams) of decarboxylated and chopped cannabis into a cheesecloth. In a medium saucepan over medium heat, bring the honey to a simmer. Add the cheesecloth with the cannabis to the honey and simmer gently over low heat for 2 to 3 hours. Remove the cheesecloth and squeeze to extract all the honey (be careful, as it will be very hot). Let cool at room temperature. Store in a covered jar in the refrigerator indefinitely.

Step 2: Line a 9-inch square pan with parchment paper.

Step 3: In a medium saucepan, combine the peanut butter, cannabis-infused honey, regular honey and coconut oil.  Allow the mixture to come to a gentle simmer. Cook on low for 3-4 minutes, stirring frequently.  Remove from heat.

Step 4: Add the vanilla and almond extracts and the salt and mix well. Add the oats, almonds, coconut and optional chocolate chips. Stir to combine.

Step 5: Press the granola mixture into the prepared pan.  If you put a little coconut oil on your hands, you should be able to press evenly — and it doesn’t have to be exactly level. Chill in the fridge for a couple of hours. Slice into 12 bars.

Dosage

If you purchased your cannabis-infused honey, the dosage should be clear on the packaging. Figure out the desired dose of THC you’d like each serving to contain and multiply by 12. This is how much THC you want in the recipe. To add this amount of THC, divide your total THC number by much THC is in a teaspoon or gram of the honey. This is how many teaspoons or grams you should add to the recipe.

If you made your cannabis-infused honey yourself, you should know the dosage of the original bud you used. If you used a strain with 20% THC and used 14 grams of cannabis, then the total amount of THC in the four cups of honey is 2,800 grams of THC. That means a 1/6 cup of honey has about 117 milligrams of THC, which means each of the 12 bars would have about 10 milligrams of THC. Adjust the dosage accordingly to your desire by adding more or less honey.
